Tailgate Team Cupcakes

Ingredients

Scale
  • 1/2 C unsalted butter (room temp)
  • 2 egg whites
  • 2 eggs
  • 2 C flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 baking soda
  • 3/4 C buttermilk
  • 1 1/2 C sugar
  • 1 tsp vanilla

Frosting Ingredients:

  • 1 C soft unsalted butter
  • 4 + C powder sugar
  • 4 TBSP heavy whipping cream
  • Maroon gel food coloring

Royal Icing Ingredients for Logo

  • 2 egg whites
  • 1 C powder sugar
  • 1/2 tsp cream of tartar
  • Maroon gel food coloring

Instructions

  1. Preheat oven to 350 degrees.
  2. Line the cupcake tins with paper liners.
  3. Sift flour, baking powder, salt, and baking soda together in a bowl.
  4. Beat butter on high for 30 seconds.
  5. Add sugar and vanilla extract to the butter …. beating until well combined.
  6. Add egg whites, and then eggs one at a time, beating well after each addition.
  7. Alternate adding the flour mixture and buttermilk to the butter mixture, beating on low speed until everything is mixed together.
  8. Add 1/3 C flour mixture to the wet mixture followed by adding 1/3 C of the buttermilk; add 1/3 C flour mixture again then add 1/3 C buttermilk mix on low speed, add 1/3 C of flour and add the rest of 1/3 C of buttermilk mix in low speed until thoroughly blended.
  9. Bake at 350 degrees for 2025 minutes or until an inserted cupcake comes out clean.
  10. Allow to cool in the cupcake tin for 10 minutes.
  11. Remove the cupcakes from the cupcake tin and completely cool on a wire rack.

Frosting Instructions

  1. Cream the butter and powder sugar until it looks light and creamy.
  2. If it doesn’t cream add several drops of the heavy whipping cream.
  3. Test to see if the frosting can form and hold a stiff peak.
  4. Add several drops of red gel food coloring….mix well…Make sure the red is the color that you want.
  5. If not add more powder sugar 1/2 C at a time.
  6. Test to make sure that the frosting can make and hold a stiff peak.
  7. Divide the frosting equally into two bowls…..first bowl remains white while the second bowl…add several drops of maroon gel food coloring….mix well.
  8. Scoop the maroon frosting into a pastry bag with a 13 inch round frosting tip…. then add the white frosting….twist the open end of the pastry bag to push the frosting to the tip….Test to make sure that the combination of maroon and white frosting comes to the tip at the same time.
  9. Frost the cupcakes by starting at the outer edge of the cupcake in a circle until you reach the center of the cupcake….Build a second smaller swirl and then a center dollop.

Royal Icing Directions:

  1. Combine all ingredients in a mixing bowl mixing on medium speed for 4 minutes. (except your food coloring)
  2. If icing is not stiff enough add 1/4 C powder sugar.
  3. Spoon 3/4’s of the icing into a bowl….add several drops of maroon gel food coloring….mix well…..Spoon the rest of the icing into a second bowl… this icing stays white.

Mississippi State Logo:

  1. Locate a picture of the Mississippi State “M” on Google… print the picture in color. Tape this picture with small numerous images of it on it to a cookie sheet.
  2. Tape wax paper (covering the copies of the image) to the cookie sheet . Follow the color and features as printed on the paper.
  3. Using a small pastry bag fill with the maroon royal icing and a #2 tip. Start by outlining the image first…. Fill in the image with the red icing… allow this to dry for 30 minutes….Leave the areas white where outlined in the pictures.. Fill in with the white royal icing.
  4. Allow to dry for 5-10 hours.
  5. Ensure that the image is dry, gently touch one of them with your finger if it allows you to push in on the icing allow it to dry more…. If the image is dry then it will have a hard feeling not allowing you to push in on it.
  6. Cut the wax paper holding the completed image into squares surrounding the completed design.
  7. Peel the wax paper from the back of the emblem.
  8. Place the emblem in the center of the frosted cupcake or on the front of the cupcake….if the “M” doesn’t stay on the cupcake use a small dollop of frosting as glue.
