Easter is still a couple weeks away and already I’m thinking about what to do with all that left over ham! This is one of our favorites and one I know you’ll love too! Teaming ham with potatoes, onion and Swiss cheese, this cheesy ham and onion pie boasts an incredible flavor, and one slice will not be enough! You can enjoy it hot from the oven or chilled, as you prefer.

This pie uses homemade pastry which is not hard to prepare, and the filling is simply seasoned – salt, pepper and garlic are the only seasonings we are using, because the ham, potatoes and cheese already deliver so much flavor.  Up the poultry to a half dozen eggs and you’ve got the best EVER quiche, perfect for guests or just a Sunday brunch! You can’t go wrong any way you do it!

Ingredients

Filling

  • 1/4 cup butter
  • 2 thinly sliced yellow onions
  • 1 1/2 cups diced ham
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 minced garlic clove
  • 3 cups shredded Swiss cheese plus more for topping
  • 3 thinly sliced large baking potatoes
  • 1/3 cup light cream
  • 2 eggs

Pastry

  • 2 cups all-purpose flour
  • 2/3 cup shortening
  • 4 tablespoons ice water
  • 1 teaspoon salt

Instructions

Pastry

  1. Put the flour and salt in a bowl, then cut in the shortening until the mixture is crumbly.
  2. Add the water gradually, using a fork to mix it in, until the dough forms a ball.
  3. Roll out half of it on a floured worktop until you have enough to fit a deep 9-inch pie dish.
  4. Cover and refrigerate the pie crust and also wrap and refrigerate the other half of the dough for another pie.

Filling

  1. Sauté the onions and ham with the garlic in 2 tablespoons of the butter in a skillet until tender, then let the mixture cool.
  2. Preheat the oven to 350 degrees F.
  3. Sauté the potato slices in the rest of the butter until tender, then add salt and pepper
  4. Layer half of the cheese, potatoes and ham mixture in the pie crust, then repeat.
  5. Whisk the cream and eggs, then pour over the pie filling.
  6. Top with more grated swiss cheese
  7. Bake for 45-50 minutes until crust is golden brown and cheese throughout is bubbly.
